New Brunswick has a rich Acadian history and many of its culinary delights such as Poutine Râpée a combination of raw grated and mashed potatoes rolled into balls and filled with salted pork. Acadian food draws from its French heritage but adds the practicality of long Canadian winters and minimal cooking appliances. Many dishes like Fricot provide the ultimate comfort food in a one-pot meal. Surprisingly pork and chicken were the most common proteins in Acadian cuisine.
New Brunswick also has a thing for fiddle heads. Fiddle heads are spiral topped ferns that when prepared right are oh-so-good. We even have festival to celebrate it: Fiddle Frolic and Fiddle Heads Opening Weekend in June. While the fiddles play along the St. John River locals and visitors alike gather to savour these tasty treats. Fiddle head soup, fiddle head omelettes, fiddle head salad, fiddle heads in white wine sauce . . .the options are neverending!
